Refreshing Cold Coffee Recipe- for National Coffee Day!

It’s fall there’s a bit of a nip in the air, but it’s still warm enough for me to make my yummy cold coffee! (And by “my” I mean my mother’s recipe since she used to make this for me all the time as a little kid!)

  • 1-2 tbsp of instant coffee (depending on how strong you like it)
  • 2-3 packets of splenda/truvia (I use this to cut calories, however 4-5 tsp of sugar will do!)
  • 1 cup ice
  • 1 cup of Skim Plus milk/1%
  • 1 scoop of vanilla frozen yogurt/lowfat ice cream

1. Place the ice, milk, coffee and sugar in a blender. Blend until frothy and smooth. Pour into a tall glass, top with 1 scoop of ice cream and enjoy! To garnish you can add a sprig on mint leaf and a dash of cocoa powder, to impress your guests 🙂

Serves about 2 (or 1 if you want to enjoy a hefty glass!)
