Chia seeds are all the rage now – packed with omega 33’s, antioxidants, potassium, protein, and fiber – these seeds can really be incorporated into anything. They don’t require cooking or blending, and have a neutral flavor. Below is my super simple 5-ingredient chia seed pudding that is perfect for breakfast or lunch. It’s super filling, healthy, and vegan!
- 1/4 cup chia seeds
- 3/4 cup unsweetened Vanilla Almond Milk
- 2 tbsp honey or agave (to keep it vegan)
- raspberries
- 1 sliced banana
In a jar, mix together milk, chia seeds, and honey. Cover and let sit in refrigerator overnight. In the morning layer in the raspberries and sliced strawberries and additional agave is desired. Enjoy!
