Homemade Cinnamon Bun Cereal (VEGAN!)

I just figured out your Christmas morning brekkie. Yes, yes. This isn’t the first homemade cereal recipe you’ve probably come across, but I can confidently say, this is probably the easiest recipe. And not to mention – VEGAN! Just like most kids who grew up in America, I grew up on cereal. I’m not getting into the debate of “oh it’s not good for you, blah blah” — this was 1995 and we had our cinnamon toast crunch, cookie crisp and lucky charms. Of course, we know better now, but that doesn’t mean this items weren’t delicious.

 

So, now that I’m older, wiser, hungrier, and vegan, it was time to make my own. And that’s when I cam across – what I call – a GENIUS idea to make quick and easy homemade cereal! This is meant to be a treat – not eaten everyday and it’s NOT part of a heart healthy diet. But it is what I said – a treat! And you can make this and keep on hand in a clean, dry, airtight container for a few weeks!

Did I mention all you’ll need is THREE ingredients? Yes, one, two THREE! That’s it! So, now that I’ve just blown your mind, let’s get to the “recipe,” and I put this in quotes because it’s so easy that this isn’t even a REAL recipe!

Homemade Cinnamon Bun Cereal: (serves 2)

  • 1 sheet puff pastry (make sure it’s vegan)
  • all purpose flour (for dusting)
  • 1/3 cup plant-based butter (softened)
  • 1/4 cup cinnamon sugar
  • powdered sugar (optional)

1. Once your puff pastry sheet is thawed, flour a large surface and roll out your pastry dough until very thin – as thin as you can get it. Making sure to flour and flip the dough as you roll it so it doesn’t stick.

2. Using a pizza roller/cutter, cut 1/2 inch wide strips across the dough. And then cut 1/2 inch wide square across. Flour the pieces and set aside.

3. In a small sauce pan, melt the plant-butter until liquidy. Add in the cinnamon sugar, stir and remove from the heat.

4. Preheat oven to 400 degrees. Add puff pastry bits to a large bowl. Pour in cinnamon sugar butter and toss to coat well – the bit will stick together and this is the process – trust me! Add to a parchment lined baking sheet, and spread out.

5. Bake for 10-15 minutes until golden brown. Remove and once cool enough to handle, break apart into their small pieces. Cool completely, top with powder sugar if desired. Pour into a bowl and top with your favorite milk. Enjoy!
