Vegan Mango Lassi

Ever just crave a lassi, but don’t want all the dairy, fat and ya know, feeling that you’re harming animals in any way by drinking this? Let me introduce you to my healthy-ish vegan mango lassi! Why “healthy-ish”?

Because mangoes still have a lot of carbs and sugars, so they’re not a quote-on-quote healthy fruit. But when ripe and when kent, aka a variety that is large and fiberless, they’re delicious! Plus, when maintaining a primarily plant-based/vegan diet, it’s ok to have a little sugar! I’ve fulfilled your craving now. You’re welcome!

Also, I totally drank this after I did my workout, because chia seeds are jam-packed with protein, omega-3’s and other delish nutrients. So you can totally drink this after your workouts too! I love the versatility of this lassi! Enjoy!

Healthy-ish Vegan Mango Lassi:

(serves 1 who has worked their buns off!)

  • 1/2 ripe Kent Mango – flesh scooped out of peel
  • about 1/2 cup almond or coconut yogurt – I use Kite Hill to get the maximum level of protein!
  • 1-2 teaspoons light agave
  • 1 tablespoon chia seeds
  • heaping 1/4 cup of ice

1.Place everything in a blender or food processor and blend until very smooth. I recommend drinking it right away. If you’re making this ahead of time, add in 3-4 tablespoons of nut milk, as the chia seeds will swell and thicken the lassi if not drank right away.
